Quesdilla con Huevos
Great for breakfast or lunch!
- ½ cup grated cheddar or cojack cheese
- 2 scrambled eggs
- 4 (6-8 inch) flour tortillas
- 4 Tablespoons salsa (optional)
Directions: Put 2 Tablespoons cheese and ¼ of the scrambled eggs on each tortilla. Heat 2 quesadillas at a time in the microwave on high for 30 to 45 seconds or until cheese melts. Top with salsa and fold tortilla in half to serve.
Makes 4 quesadillas.
Make them plain or add peppers, tomatoes, mushrooms, or onions. Instead of using the microwave, you can heat them on a skillet or griddle until the cheese melts.
